Grandma always did this by smell, we use a candy thermometer! Christmas we could always count on Peanut Brittle when we came to Grandma Riggan's house, she always had raw peanuts in the freezer to make it.
Mix the sugar and Karo syrup and begin heating. As soon as they are melted, add the peanuts. Heat while stirring until the mixture reaches 300 degress (hard crack on candy thermometer). Add the vanilla if you choose and mix in. Add the baking soda as you remove from the heat and mix quickly and well. for about 10 seconds. Spread on a un-greased pizza pan, helps to have another pair of hands to "shake" and tilt the pan to spread the mixture thinner.
Can be helpful to heat the pizza pan first to keep the mixture from cooling too quickly.
Crack into smaller pieces when cooled.
