Suggest a better descriptionIn a bowl, sift flour and confectioners’ sugar, then set aside. In another bowl, beat egg whites until foamy. Add 1/3 granulated sugar and beat till mixed. Keep adding until all the sugar is combined. Whip until soft peaks. Add in color. Whip to stiff peaks. Add flour mixture to egg whites. Fold in. Place mixture into a piping bag with 12 tip pipe onto parchment lined tray to allow to set for 15 minutes.
Place in the oven at 300 degrees for 15 minutes. Remove and allow to cool for 5-10 minutes. Move to cooling rack to finishing piping filling onto the cookie and place on top to make a sandwich.
Filling
Melt chocolate. Mix in peanut butter and add the pinch of sea salt. Pour into another pan to cool. Pipe when cool. Stir to not whisk.
