From Rick’s recipe collection … a crunchy style cookie
Preheat oven to 375 degrees F. Cream together butter/margarine and sugars until blended. Blend in egg, peanut butter and vanilla. In a separate bowl, mix together flour, baking soda and salt; then stir into batter mixture. Stir in chopped peanuts (optional) Roll into 1 inch balls and place 2 inches apart on ungreased cookie sheet. Flatten each ball with a fork dipped in sugar, making a criss-cross pattern. Bake for 10-12 minutes or until cookies begin to brown.
