Cut the chicken into 1 inch pieces. in a large skillet over medium high heat, add 2 tbsp canola oil. add in the chicken pieces and sauté for 5-7 minutes or until cooked through.
add in the remaining canola oil, ginger and garlic. cook for 1 minute or until fragrant. then add the bell pepper and red chilies. cook for 5 minutes or until the vegetables are cooked through. remove from heat and keep warm.
in a small bowl, combine the sherry, oyster, soy sauce, cornstarch and sesame oil. heat a small saucepan over medium heat and pour in the sauce. bring to a simmer and let cook for 3-4 minutes or until sauce thickens.
pour the chicken into the sauce and toss with peanuts. garnish with scallion stocks and enjoy.
