1. In a large saucepan, cook potatoes in large amount of boiling water for 20-25 min or until tender; drain well and let cool. Cut potatoes into 1-inch cubes.
2. In a very large bowl, combine bacon (if using), mayonnaise, peanut butter, sweet pepper, peanuts, celery, green onions, cilantro, parsley and vinegar. Add potato cubes. Toss lightly to mix. Cover and chill for at least 4 hours or up to 24 hours.
