Great accompaniment to Sates, using roasted peanuts and coconut milk
1.Chop peanuts coarsely (according to preference, I like them quite chunky)
2. In a saucepan combine Coconut milk turmeric,curry powder, cayenne and sugar.
3. Bring to the boil then reduce to a low heat and add peanuts, stirring until sauce reaches desired consistency (Again a personal choice), about 2-3 minutes is usually enough
4. Add lemon juice and salt, remove from heat and allow to cool.
serve warm or cold alongside your favorite sates
