In a medium mixing bowl, combine flour, 1 cup sugar, and salt. With a fork mix thoroughly the margarine, egg yolk, milk and vanilla. Combine the flour mixture with the margarine mixture. Roll into bite-sized balls. Place on ungreased baking sheet. Press flat (1/16-inch thick) with the bottom of a glass dipped in oil and remaining sugar. Brush with slightly beaten egg white. Sprinkle with pecans. Bake at 375 degrees for 8 to 10 minutes. Do not overbake. Yield: 5 dozen.
