Sift flower and salt together; cut in shorting with pastry blender until peaces of the size of small Pease. ( for extra tender pasty, cut in half the shorting until like cornmeal. Cut in remaining till like small peace.) Sprinkle one tablespoon water over part of mixture. Gently toss with fork; push to side of bowl. Repeat till all is moistened. Form into a ball. (For double crust divide dough for lower and upper crust and form in two balls.) Flatten on lightly flowered surface by pressing with edge of hand. Three times across each side of dough. Roll from center to edge till 1/8 inch thick. Set aside.
Preheat 400
PECAN FILLING:
In a large bowl crack 6 eggs. Whisk till blended and set aside. In a medium size pan put two cups sugar and 1/2 cup light kayo and 1/2 cup dark kayo. Cook on medium high heat until it's thick and bubbly. Takes approximately about 10 minutes based on your stove. With whisk in hand gradually poor the hot syrup into the eggs slowly as whisking. Stir in till all combined. Add the stick of butter to the bowl. Add two teaspoons Vanilla and 1/2 teaspoon salt. Poor in 2 cups chops pecans in mixture. Divide mixture and poor into the 2 pie crusts evenly.
Bake at 400 degrees for 10 minutes. After 10 minutes cover each pie with aluminum foil loosely to prevent pie over browning. Lower oven to 375. Continue baking for 45 minutes. Remove from oven and done.
