Weekend meal. The puré might be freezable...

1. Värm ugnen till 225 (varmluft) eller 250 (vanlig).
2. Rostad pumpa: Skala, halvera och kärna ur butternutpumpa. Skär i tärningar. Skala vitlök. Lägg allt på en plåt med bakplåtspapper och blanda med olivolja, salt, chili flakes och nymald svartpeppar. Rosta högt upp i ugnen 15-18 min, tills pumpan är mjuk och fått färg.
3. Koka pennepasta enligt avisning på förpackning. Spara 2 dl av pastavattnet till punkt 5.
4. Lägg rostade vitlöksklyftor, häften av den rostade pumpan och 1/2 vatten i en mixerbunke. Mixa slätt till en puré.
5. Häll av pastan och lägg tillbaka i kastrullen. Blanda med pumpapurén, det sparade pastavattnet och resten av den rostade pumpan. Smaka med lite salt och nymald peppar.
6. Bryt chèvre i bitar. Servera pastan toppad med chèvre, ruccola och rostade solros.
PS: The original recipe has hackade hazelnuts instead of rostade solros. It also suggets 400g penne, but according to my experience it was just too much pasta for too litle sauce. That´s why the next time should use max 250 g penne.
