A quick Mexican Sauce to serve with Tofu or Chicken. If using Tofu, drain and pan fry cubes. If using chicken, braise it to start the cooking process.
1. Pour the sauce and the can into the blender
2. Toast the pepitas and the sesame seeds
3. Char the onion quarters, add to the blender
4. In a large saucepan, cook garlic, add to blender
5. Blend until smooth, add water if needed
5. Return sauce to saucepan, if too thick, add boiling water
6. In a separate pan, add tofu and add sauce until covered. Simmer on low. Add forzen corn. Adust salt to taste. Serve over rice.
