In a large bowl, combine the potatoes and onion. Combine the butter and seasonings; drizzle over the potatoes mixture and toss to coat. Place half in a greased 13x9 baking dish. Sprinkle with half of the cheese; top with remaining potato mixture.
Cover and bake at 400F for 45-50 minutes or until potatoes are tender. Uncover; sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted. Serve with Salsa if desired.
