From Whole 30
1. Preheat oven to 350 F. Line baking sheet with parchment paper.
2. Heat 1 tbsp. of cooking fat in heavy skillet over medium heat. When fat is hot, add onion and cook, stirring, until softened, about 2 minutes. Combine sautéed onions, ground meat, sage, salt, pepper, and garlic powder in large mixing bowl and blend well with hands. Form into 8 equal patties about 1 inch thick.
3. Heat remaining 1 tbsp. of fat in same skillet over medium heat and swirl to coat bottom of pan. When fat is hot, add sausage patties and brown for 2 minutes on each side. 4. Transfer sausage to baking sheet and finish cooking them in oven for 5-7 minutes until no pink remains in middle of a patty.
These freeze beautifully. Stack in covered container between sheets of wax paper so they don't stick together.
