Squeeze the lime juice over the fillets in an oven proof casserole that will hold them in a single layer. Season with salt and pepper and let stand for an hour at room temperature.
Meanwhile, preheat oven to 350 deg. F. Mix everything together except the lime wedges. Starting with the mild Anaheim chiles, test the mixture for "heat" from the chiles and adjust as needed. You may want to add some heat from either the jalapeños (hot) or the Serranos (really hot).
Once you've settled on the spiciness pour the mixture over the fish and bake for 20-25 minutes or until fish is flaky and the sauce is bubbling hot.
Serve and garnish with more cilantro and lime wedges.
