Easy, tasty, different chicken recipe!
Preheat oven to 350 degrees Fahrenheit.
Pound chicken breasts between two sheets of wax paper until at least 1/2" thin.
Discard wax paper.
Spread half of the pesto on each chicken breast. Adjust according to your love of pesto.
Place one half of the cheese strips on each chicken breast.
Place one half of the roasted red pepper strips on top of the cheese.
Roll up each chicken breast lengthwise. Secure in a roll with twine or toothpicks.
Brush outside of chicken with oil.
Sprinkle chicken with Italian herb blend or Tuscan herb blend.
Place in baking dish.
Bake uncovered for 45-60 minutes until done.
Allow to stand for 5 minutes before serving.
Remove twine or toothpicks before serving. The chicken will retain its rolled shape.
