Preheat oven to 350 degrees. Toss sliced potatoes with olive oil, salt and pepper, then spread in a single layer of a parchment-lined baking sheet. Roast in oven until softened and beginning to color, approximately 15-18 minutes.
Meanwhile, melt butter in a small saucepan over medium heat, add lemon juice and white wine and reduce by half, until slightly thickened and beginning to darken. Approximately 3 - 5 minutes, remove from heat and reserve.
Add lemon slices to potatoes, lay fish fillets over potatoes and lemon, sprinkle lightly with salt and pepper and drizzle with reduced butter/wine mixture. Bake until fish is flakey, approximately 7-9 minutes. Remove from oven garnish with chives, parsley and bread crumbs..
Serve immediately
Keep an careful eye on the butter wine reduction, it will go from slightly brown to burnt in the blink of an eye.
