Fry up the onion in vegetable oil until it softens and goes brown.
After a minute add in the Chorizo with the onions.
Add in the chilli flakes and garlic for a couple of minutes at the end.
Put in all the spices and lots of salt and pepper for a minute.
Put in the beans and stir to coat in spices.
Add in the stock and water and leave to simmer with the lid off for 3/4 hours until beans are ready. Add more water / stock if it looks like its drying out.
