There are lots of reasons why pizza is so addictive, and a lot of those reasons are in this salad. No matter how these familiar flavours arrive, they always show up delicious!
1. Preheat your oven to 350. Turn on your convection fan if you have one. Line a baking sheet with parchment paper and lightly oil the paper.
2. Arrange the prosciutto slices at one end of the baking sheet. In a large bowl, quickly toss the bread with the water until the moisture is evenly absorbed. Splash in the oil and toss again until evenly coated. (The water on the inside helps the croutons Tay chewy, while the oil on the outside adds crispness). Spread out on the other end of the baking sheet. Bake, stirring once halfway through, until the croutons are golden brown and crispy, about 15 min.
3. Meanwhile, wipe out the bowl and in it whisk together the dressing ingredients until emulsified. Throw in cherry tomatoes, bocconcini and basil leaves. Sprinkle on the croutons and crumble in the prosciutto. Toss the works together, evenly mixing the flavours, textures and colours.
4. Serve, share and enjoy a little piece of Italy in your very own kitchen!
