When stuck in your house during a mandatory federal quarantine mandate during the Corona Virus, you need to start getting creative and making fun desserts that all can delight in. Pizzelles were a staple for me growing up in RI. My grandmother would bring a double batch any time she would visit, So why not carry on the tradition!

- Beat eggs, sugar, salt and vanilla until well combined
- Stir in the flour and baking powder, mixing until smooth
- Add melted butter, mix still smooth. Batter should be thick and soft
- Heat pizzelle iron and spray surfaces with Pam spray
- Place desired amt into the mold and cook per unit instructions (usually around 45 secs to 2 mins)
- Remove and cool on a wire rack. Dust with powdered sugar if desired
