Heat 2 tablespoons oil in a pot, add the onion and cook over medium heat for 5 minutes until golden.
Add the chicken and brown. Add the tomato paste and stir . Add the spices and water, and stir.
Bring to a boil, skim, cover and cook for 45 minutes (or until chicken is ready, 180F internal temperature).
Take the chicken pieces out of the pot and place on a separate dish. (keep the soup in the original pot).
Add the washed rice to the pot. Add water to cover (if needed). Bring to a boil, mix and cook for 20 minutes till soft.
Meanwhile, prepare the serving mix: heat 2 tablespoons oil in a pan, add the onion, and cook over medium heat for 5 minutes until golden. Add the dried fruit and almond mixture, stir and cook for 1 minute.
Serve and enjoy!
