Suggest a better descriptionCombine plums & water in preserving pot and bring to a boil over medium heat. Reduce the heat to medium-low. Cover and simmer for about 20 minutes, stirring occasionally, until the plums are soft. The plum pits will rise to the surface; fish them out with a slotted spoon. Add sugar and lemon juice. Increase the heat to medium and cook, stirring often for 20 to 25 minutes, or until thickened. Test for set if desired.
Remove from heat. Stir and skim off foam if necessary. Pour into hot, sterilized jars, leaving a 1/4 inch head space. Wipe rims clean. Seal. Process jars in boiling water bath for 10 min.
Variation: Plum Apple Jam: Replace water with 1 cup apple juice and add 1 pound apples, peeled, cored, and coarsely chopped, to your preserving pot. Increase sugar to 4 cups and use juice and finely grated zest of 1 whole lemon.
