fast and easy fish dish
Put oil the the smallest skillet or dutch oven that will hold the fish. When the oil is hot add the ginger, sprinkle in some salt and pepper, and cook stirring until it sizzles, a minute or two.
Add the fish, soy sauce, scallions, cilantro, rice vinegar and 1 1/2 cups water. Bring to a boil, then ocver and remove from the heat. The fish will be done in about 10 minutes. Remove the fish from the pot and garnish with a little of the broth and top with ore scallions.
