Suggest a better description1. Peel and roughly chop garlic cloves and shallots. In a large saute pan with a lid, place the olive oil, garlic, shallots. Cook over med low heat for about 3 mins.
2. Place tomatoes, wine, water, thyme, salt and pepper in pan and bring to a boil. Once boiling, bring to simmer and cover. Simmer for 25 mins until tomatoes have burst releasing their juices. With a wooden spoon or spatula, crush tomatoes into a pulp. Simmer uncovered for another 5 mins.
3. While broth is still simmering, place salmon in broth skin side up. Cover and poach for about 8 mins (maybe more if it's a thick piece of salmon). Once cooked, place salmon aside. Place strainer into a large bowl. Strain broth discarding solids. Taste broth and add salt and pepper if needed.
4. pour strained broth over salmon. Add drizzle of white truffle oil if desired.
