Suggest a better descriptionBring water to a boil over medium heat. Add salt.
Pour polenta into the boiling water in a steady stream, whisking gently.
Turn the heat to low and continue whisking until polenta thickens enough that it doesn't settle to the bottom of the pan when you stop stirring.
Cover and cook 30-40 minutes, stirring vigorously every 10 minutes. Cook 30 minutes for softer polenta, or 40 minutes for thicker polenta.
Stir in cheese and butter, if using.
