Jim's #1 favorite dinner.
Cook rice, according to package directions, in reserved chicken broth (after having cooked the chicken). While rice is cooking, combine soup, milk, mushrooms, onion, salt, pepper and chili powder. Mix thoroughly. Layer ingredients in a greased 13x9 baking dish as follows:
chicken - rice - soup mixture - picante sauce - cheese
Repeat layers. Bake at 350 for 20 minutes. Garnish with fresh cilantro and sliced serrano chilies. Makes 6-8 servings.
This is a labor-intensive dish, so it's good to make ahead.
