Homemade Popeye fried chicken sandwich
FOR THE FRIED CHICKEN
Marinade flattened chicken breasts in eggs, (beaten), buttermilk with a generous dash of cajun seasoning for several hours.
BREADING FOR CHICKEN and AIR FRY the chicken.
Mix well, flour, cayenne pepper, paprika, ground pepper, cajun seasoning and salt.
Shake off excess liquid and coat the chicken with breading.
Place coated chicken on a plate to get rid of excess flour.
Spray the air fryer with some oil.
Put chicken in the air fryer and spray chicken with olive oil.
Cook chick at 375 for 30 minutes.
Turn chicken over at 15 minutes and spray with olive oil if necessary, continue cooking.
FOR THE SAUCE:
Japanese mayo, cayenne pepper, cajun seasoning
LET'S BUILD:
Light toast Brioche rolls on the stove.
Apply the sauce.
Place 3-4 pickles on the bun.
Place chicken on the bun.
Top with the top bun.
Voila and enjoy!
