Slice pork loin into thin slices. Sprinkle slices with a little salt and pepper. In a skillet, brown meat well on both sides in hot oil. Place meat in large pan or 2 12x7.5x2 dishes.
Combine apples and brown sugar. Spoon over tenderloin. Combine stuffing mix celery melted butter onion, salt and sage. Toss with beef broth till moistened. Spread over the apples. Bake uncovered at 375 till pork is done-about 1 hr.
To freeze: omit baking. Wrap securely and freeze. Bake frozen casseroles covered at 400 degrees till pork is done about 1 1/4 hrs or 3 hrs at 175 degrees
