Season them with salt.
Cook slowly in a sautoir with butter and a little oil, for around 20 minutes. Remove the pork chop and set it aside.
Degrease the pan and sweat the chopped onions.
Add the mustard and continue sweating.
Deglaze with white wine and reduce completely.
Add the pork juice and cook for a few more minutes.
Remove from the pan then and strain.
Reduce to desired consistency. Whisk in some butter nuggets.
Adjust the seasoning.
Finish with julienned pickles and pommery mustard.
PREPARATION OF PORK JUICE:
Cut the trimmings in 4x4 cm pcs
Once they are brown, add butter, sliced onions, crushed garlic, thyme and pepper
Cook slowly for 10 to 15 mins
Degrease by half the cocotte. Deglaze with one ladle of chicken stock and reduce. Do this 3 times.
Add rest of the stock and cook for 1 hr to 1hr and 15mins
Strain and reduce until desired consistency
Set aside for the charcutiere sauce
