Lightly beat eggs in another bowl
Sprinkle pork with salt and pepper
Dip pork in the egg, allowing excess to drip off
Dredge pork in crumb mixture, patting to coat completely
Heat oil in large skillet over medium high heat
Add pork and cook until golden brown, about 3 minutes on each side
Transfer pork to plate with paper towels to drain, then serve
