Use water pan
275 degrees for 2 hrs
Spritz and sauce. Spritz with water, apple cider vinegar, or apple juice. Don't use sauce with too much sugar. Should pre-heat sauce, or us half sauce half water mixture.
After spritzing, cook for 15 minutes, and then wrap in foil. Use a towel to pick up. Spritz the foil, then sauce the foil.
Cook for another 2 hrs.
You know it's done if it feels loose and tender when handled. Can poke with a toothpick for tenderness.
Rest for 20 minutes, wrapped.
Slice, eat.
