This is an outstanding pork soup for those cold and dreary days. It is unlike most types of soup.
Pre Preparation
- Chop the garlic
- Dice the onion
- Cube the potatoes
- Shred the cabbage
- Cube the pork
Preparation
In a soup pan, add the olive oil and heat over medium heat. Add the pork, bacon, and onions. Cook until the onions are tender and the bacon fat is mostly cooked off. Drain the fat. Add the remaining ingredients and bring the soup to a boil. Simmer covered over low heat until the soup just stays at a boil for 2 hours or until the taste meets your standards! Check it often for meat tenderness and flavor. Serve warm with your favorite squash or vegetables.
The salt is variable depending on the salt content of the chicken broth. Also, the key to great cooking is tasting your food while you cook. It could take longer or shorter depending on your tastes. It is about tasting, not perfection!
