Suggest a better descriptionPreheat oven at 350 degrees. Put olive oil in cast iron pot and heat. Salt and pepper pot roast and brown on both sides. Add stock and mushroom soup. Sprinkle with French onion soup mix add thyme, garlic and bay leaf. Bring to a boil.
Put in oven covered for an hour and 15 minutes. Add potatoes and carrots cook for 40 minutes, add mushrooms and cook for 20 minutes. Let rest for 1/2 hour.
