Peel and thinly slice all onion and all potato. Saute onion in butter until translucent. Rinse sliced potatoes in cold water and dry. Layer 1/2 of the potatoes and 1/2 of the onion in alternating layers at the bottom of a 3 quart baking dish. Sprinkle salt and pepper to taste, then cover with 1/2 of the Parmesan cheese and 1/2 of the cream. Cover with a layer of all of the ham. Continue layering with the rest of the potato and onion. Cover with more salt and pepper to taste, the rest of the parmesan and the rest of the cream. Bake at 375 for 1 1/2 hours, covered until the last 1/2 hour. During the last half hour, top with breadcrumbs or additional flavorful sharp cheese as desired.
