A potato salad recipe measured to serve two people
Wash and microwave potatoes until tender, about 8 minutes on high
As potatoes cook, combine egg, mustard and mayonnaise and blend with a fork until egg is minced, set aside.
When potatoes are cool, prepare them as you wish, I peel and dice into 1/2" cubes.
Place potatoes, celery, onion, relish and radishes into bowl. Add mustard/ egg/ mayo mix.
Stir to combine. Taste and add any ingredients to suit your own taste.
Garnish with Tumeric, Chives and Paprika.
