A different version of potato salad . Really easy and customisable. Enjoy!
1. Boil your potatoes for 10-15 minutes in hot water over low heat or until you are able to pierce it with a knife easily. Drain. Season potatoes generously with salt and pepper. Put in the refrigerator to cool while preparing other ingredients.
2. Boil your edamame peas according to packaging. Drain and shell the peas (after they cooled of course)
(you can use boiled celery or whatever you like instead)
3. Mix together the mayonnaise, lemon juice, lemon zest and sour cream. If it is too thick, add some milk. If it is too watery, add more mayonnaise. Add salt and pepper to taste. (You can add cayenne pepper too)
Taste the dressing and adjust accordingly. Refrigerate.
4. Chop up your bacon into small pieces and fry over medium heat until crispy. Drain it on kitchen towels.
5. Take out your potatoes and dressing. Mix the potatoes,edamame peas, dressing and bacon bits. Garnish with chopped spring onions.
6. Enjoy your delicious salad!
