Preheat oven to 350 degrees. Bake potatoes for 45 minutes. Cool potatoes.
Cut potatoes in half, scoop most of the potato leaving a thin amount on skin. Turn potatoes skin side up on cookie tray, spray with Pan, sprinkle with salt and Parmesan cheese. Bake for 8 minutes. Stop her if you are making them ahead.
Turn over, fill with cheddar cheese and bacon. Bake until cheese has melted (3-8 minutes).
Top with sour cream and onions.
