Cooking day instructions:
Preheat oven to 400 degrees. Place potatoes directly on oven rack and bake 45-60 minutes or until easily pierced with fork. Remove from oven, cool slightly, and halve lengthwise. Grease 13x9x2 or 3-quart baking pan. Scrape out potato flesh. Mash potato flesh with electric mixer or hand masher until smooth. Add butter and milk ans stir until blended. Spread in prepared pan.
Freeze, using foil and plastic wrap method: (Line baking dish with aluminum foil first and then with a layer of plastic wrap (make sure that the foil and plastic wrap are large enough to cover the bottom, sides, and top of the dish). If your food is hot, allow it to cool slightly. Fill the dish with your prepared meal. When completely cooled, seal the plastic wrap, removing as much air as possible. Then weal the outer aluminum foil layer. With the packaged meal still in the pan, place it in the freezer. Once the item is frozen, slip the meal out of the pan and into a freezer bag.
On serving day, remove the meal from the freezer and thaw slightly. Remove foil and plastic wrap, then place in the original dish for baking. If you have a little trouble getting the plastic wrap off, place the meal in the microwave or dip it in warm water quickly.)
Serving day instructions:
When potatoes are thawed, preheat oven to 500 degrees. With electric mixer, whip cream to soft peaks, then fold in Gruyere by had. Spread evenly over potatoes and sprinkle with Parmesan. Bake until heated thoroughly and topping is golden brown. Garnish with parsley and serve warm.
