Suggest a better description1. Add broth and skin to a sauce pan and bring to a boil, boil for 3 minutes.
2. While still hot, add 100 grams of poultry skin to a food processor or blender, along with 150 grams of the cooking liquid. Add 1 grams of salt and tapioca powder. Blend for 25 minutes at high speed, until completely smooth and the tapioca powder binds.
3. Pass the mixture througha fine sieve. Add baking soda and mix to combine.
4. Preheat the oven to 350 degrees.
5. Pipe the mixture onto a baking sheet lined with a silpat. Gently place another silpat on top to smash the mixture into circles. Place in the preheated oven and bake for 12-15 minutes.
6. Remove and let cool. Serve.
