Peel and devein prawns
Blitz chilli onion garlic and ginger until it makes a smooth paste
Heat the oil in a frying pan and fry curry leaves, mustard seeds, fenugreek and asafoetida for 30 secs to release aromas
Add paste and fry for a couple of minutes to remove harshness
Add turmeric, water and prawns and cook for a couple of minutes, stirring to cover prawns
Add coconut milk and season with salt and pepper
Cook for three mins to heat through
Squeeze lime juice in an garnish with coriander
