Prime Rib
A 6.7 pound rib roast bone-in takes about 2 1/2 hours total. A boneless 9 lb roast also takes about 2 1/2 hours
Combine fresh garlic, oil, rosemary and thyme. Rub on rib roast. Let rib get to room temp before cooking (6 hours.)
Pre-heat oven to 550 deg.
Cook rib roast for 20 minutes at 550 deg. In middle of oven.
Turn down oven to 175 deg. and cook for 25 minutes per pound.
Cook to 131 deg (always use this temp. Perfected)
Let sit covered for 20 min and slice with electric knife.
Salt outside of roast.
