Beef rib roast dish
Place beef roast in a roasting pan with fatty side up. In a small bow, mix together garlic, oil, thyme, rosemary, sage, salt and pepper. Drizzle over roast and let marinate about 2 hours at room temperature.
Preheat oven to 475'F
Put roast in oven and roast for 15 minutes. Turn oven down to 325'F and roast until meat thermometer inserted in thickest part of roast reads 120'F for medium rare. This will take about 15 minutes per pound, or 2 1/2 hours for a 10 lb roast. Every 1/2 hour, baste the cut ends of the roast with the fat accumulated in the roasting pan. Do not cover roast.
Transfer to a large platter, tent loosely with foil, and let rest for 30 minutes before serving, to keep juices intact.
Makes 20 servings.
