Preheat oven to 375 deg. Puree garlic in blender. Add 1 tsp salt and mix to a paste. Trim fat in 1-2" strips and reserve. Pat garlic over top and sides of roast. Pleace bay leaves evenly over garlic. Replace fat strips over roast & tie in place. Sprinkle with salt & pepper. Place roast in pan and pour red wine in bottom. Place roast in oven uncovered for 1 hour. Turn oven off - KEEP OVEN DOOR CLOSED! 1 hour before serving turn oven on to 300 deg and continue to cook. Roast is done at 120 deg (use thermometer). Remove from oven, tent and let stand until temp rises to 130 - 135 deg (memium rare).
