Suggest a better description1. In a large pot or Dutch oven, heat 1 tablespoon oil over medium high heat. Add onion & 3/4 tsp salt and cook, stirring occasionally until onion is soft and translucent, about 5 minutes.
2. Add tomatoes, pumpkin, chipotle pepper, and adobo sauce, bulgur, and 2.5 cups of water to pot, stir. Bring to a summer, stir again, cover and reduce heat to low. Cook 15 to 20 minutes, or until bulgur is soft. Season with 1/2 tsp black pepper. Garnish with avocado slices, plain Greek yogurt, tortilla chips, and and/or cilantro sprigs, if desired.
