Heat the oil and add the pumpkin to this and season well. Cook over a high heat until the pumpkin has coloured. Remove the pumpkin and keep to one side. Into the same pan with the remaining oil, add the garlic, ginger, spices and chilli. Then add the rice and stir until it's completely coated. Then add the stock and bring to the boil. Scatter over the pumpkin pieces, lower the heat to a gentle summer, cover, and cook until the rice is tender and all has come together. Serve with a scatter of coriander leaves.
