Suggest a better descriptionPreheat oven to 375 degrees. Line baking sheets with parchment. In a large mixing bowl combine flour, baking powder, baking soda, pumpkin pie spice and salt. Whisk together until well combined. In another large bowl with a stand mixer cream butter and sugars on medium high speed until light and fluffy. About 1 minute. Add pumpkin, egg and vanilla to the mixture. Beat on medium speed until just combined. Fold in flour mixture, just until ingredients are combined. Using medium cookie scoop place on prepared baking sheets. Bake 17 minutes until cookies bounce back lightly. Frost or drizzle with frosting and sprinkle with pumpkin pie spice blend.
Cream Cheese Frosting: with electric mixer, beat 2-8oz blocks of cream cheese, 6 tablespoons room temperature butter and 2 teaspoons of vanilla together on med high speed until smooth. Gradually add 4 cups of powdered sugar until combined and smooth. If frosting is too thick, add in a little milk until desired consistency is met.
