Beat butter and sugar on high speed until light ad fluffy.
Add egg, buttermilk and vanilla and beat until incorporated.
Whisk flour, cocoa, baking powder, baking soda and a pinch of the salt, add to batter, beating just until combined.
Drop 2-tbsp sized scoops of batter onto parchment lined baking sheet 3 inches apart.
Bake until edges are set but cookies are still soft, approx. 8-9 minutes.
Cool for 2 minutes, then transfer to wire cooling rack to cool completely.
To make filling beat cream cheese and remained 1/2 stick butter in a small bowl on high speed until smooth.
Slowly beat in powdered sugar, pumpkin, cinnamon and remaining salt until smooth.
Spread a heaping tablespoon of filling on flat side on 12 cookies, and top with remaining 12 cookies.
Make 24 cookies originally, then once filled you will end up with 12 whoopie pies.
