Vegan quick biscuits, can be made in minutes in the food processor
Preheat oven to 375.
In a food processor, combine dry ingredients. Pulse until well combined.
Add butter distributed throughout the dry ingredients. Pulse until the consistency of wet sand.
Add milk and pulse until combined but don't overwork. Dough should pull away from the sides of the bowl.
Transfer to lightly floured surface and, using hands, press into 1" thick disc.
Cut with biscuit/cookie cutter. Place biscuits, touching, on baking sheet. Biscuits should touch to increase rise.
Depress the center of each biscuit slightly to correct for over-rise.
Brush the top of each biscuit with additional melted vegan butter (if desired).
Bake at 375 for 12-15 minutes.
