Suggest a better descriptionSqueeze excess moisture from shitake mushrooms and finely chop them. Heat oil in large skillet over med-high heat. Saute fresh mushrooms 1 min, then add shallot and cook, stirring, for 30 more seconds. Add shitake mushrooms and garlic, and cook for 1 min. Pour madeira, then stir in tomatoes, thyme, salt and pepper. Cook until mushrooms have softened-3 or 4 min. Stir in cornstarch mixture and cook until slightly thickened-1 or 2 min. transfer to serving dish and sprinkle with parsley.
