Suggest a better descriptionCream butter. Add next 3 ingredients and egg yolk and beat until light.
Add flour and stir until well blended.
Wrap dough in waxed paper and chill well.
Preheat oven to 300 degrees.
Divide dough in 3 equal pieces. On lightly floured board, shape into rolls about 1" in diameter.
Cut rolls 3/4 pieces and shape into balls. Dip balls first in slightly beaten egg white, then roll in almonds.
Put onto un-greased cookie sheets and press center of each cookie down with forefinger.
Fill indentations with about 1/4 tsp jam.
Bake 20 minutes and remove to rack to cool.
Decorate jam with Confectioners sugar mixed with a little lemon juice.
