1. Preheat the grill. Sprinkle the porridge oats onto a baking sheet and toast them lightly, turning once and taking care they don't burn. Cool.
2. Beat the soft cheese in a mixing bowl until smooth, then mix the yogurt, sugar and vanilla extract. Stir in the cooled oats.
3. Pour half the raspberries into the base of four serving glasses, reserving a few for decoration. Crush the rest of the raspberries with a fork, then stir them through the soft cheese mixture to give a pretty swirled effect. Spoon into the glasses and then chill until ready to serve, decorated with the reserved raspberries.
1. To thaw frozen raspberries quickly, microwave them on HIGH for 40 seconds.
2. Use high fibre porridge oats.
