Chicken alfredo with a kick
-- Pasta --
In large pot heat salt and water on high heat. Add pasta once water reaches a rolling boil and stir for one minute to prevent sticking.
Cook for 10 minutes. Taste to see if pasta is done. Strain.
-- Chicken --
Liberaly coat whole chicken breast with Cajun seasoning. Place chicken on grill at med-high heat. Cook 3-4 minutes per side. Remove from heat and slice into 1/2 thick strips. Keep warm.
-- Sauce --
Saute peppers and mushrooms in olive oil and butter over medium heat. Add garlic and cook for one minute more. Wisk in cream cheese and cream. Stir frequently until cream cheese is melted. Add cajun seasoning and bring to a simmer. Reduce heat to low and let simmer for 5 minutes. Stir in tomatoes.
-- Serve --
To each plate serve 1/4 lbs pasta. Cover with 1/4 cup of sauce. Top with 1/4 pound of chicken.
